Feed Me: Your Favorite Thanksgiving Recipes

With Thanksgiving coming up tomorrow, people will be ramping up their ovens and stoves with mounds upon mounds of food. I’m not much for the holiday since I’m a light eater, but I know most everyone else in the world indulges themselves on turkey, dressing and pie.
I appreciate a good pumpkin pie, but the whole turkey and dressing thing is not for me. Maybe I’m missing out on the real good food of Thanksgiving. What dish should I be sticking on the Thanksgiving table tomorrow?

Orville’s dressing with oysters. The “best”!!

Here is the beloved recipe if my Father, Orville. This will feed about twenty people.
Make your chicken broth the day before. I use the crock pot for this by taking four fresh uncooked thighs bone in, a chopped onion, and four stalks of chopped celery and one teaspoon of poultry seasoning, salt and pepper to taste. Fill the crock pot with water and cook on low for ten hours. Refrigerate and skim off the fat if any. Strain the vegetables before using.
Dressing
3 bags of unseasoned crutons
1 cup of celery chopped
1 med onion chopped
1/2 c butter
salt and pepper
poultry seasoning 1/2 tsp.
8 oz can of oysters chopped
Saulte the onions and celery in butter for about five minutes or until tender. Add the oysters and stir gently. Season with salt and pepper to taste and add 1/2 teaspoon of the poultry seasoning. Pour the strained broth over this mixture and heat till warm. Pour this mixture over the croutons until moist when mixed. Grease a large roasting pan, and pour the mixture into this. Cover with foil and bake at 350 degrees for two hours. Dressing should be firm but not dry. Let stand fifteen minutes before serving. This recipe has been in our family for nearly 100 years, its not thanksgiving without it.
